All Hail King Seitan!

Ok, so I have been doing the vegan thing now for about 6 months and Christi and I are starting to get pretty good at it. From the start, I have heard about seitan but every time I made it, there was always this aftertaste that I could never get past, until last night. Last night I decided to give it another shot and I made Vegan Chicken Fried Chicken. This kicked so much ass!!!!! This is what you need.....

2 cups vital wheat gluten
1 cup garbanzo bean flour
3 tablespoons nutritional yeast
1 + cup of vegetable broth
1 can of tomato paste

For the breading this is what you will need.....

1 cup of flour
1 cup of non dairy milk
1 cup of corn flake bread crumbs

So, you want to mix all of your dried ingredients together as well as mix the tomato paste in with the cup of vegetable broth and stir until it is all incorporated. Once everything has mixed well and all the flour has been absorbed, you will have a nice size dough ball. You will want to knead the dough for about 5 minutes to get all the ingredients to mix together.

Cut the dough into four equal pieces and place on your cutting board. Before you continue, you will want to pour 4 cups of vegetable broth into a pan and add 3-4 cloves of garlic as well as 1 chopped up bunch of green onions. Bring the pan to a boil and reduce down to a simmer. While you are getting your simmer on, take those 4 chunks of seitan that you just made and squish the shit out of them until they look the way you want your vegan chicken fried chicken to look. Place in the pan for 40-45 min. MAKE SURE YOUR LIQUID SIMMERS ONLY, BOILED SEITAN WOULD TASTE LIKE RUBBER.

This gives you plenty of time to get the ingredients together for the breading.

After your seitan has cooked, you want to remove the patties from the liquid and give them a chance to cool. While they are cooling, pour vegetable oil in a skillet and turn it on so it starts to heat up. Take your patties and dip into your soy milk, into the flour, back to the soy milk, and finally into the  bowl of corn flakes and into the the skillet. Fry well on both sides and enjoy. Yours should look like this when you are finished.
